
Taco Beef & Cheese Stuffed Peppers

A bold and zesty twist on a classic comfort dish!
Ingredients:
- 1 lb Rocking R ground beef
- 4 large bell peppers (red, yellow, or green)
- 1 cup cooked rice
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1 (14.5 oz) can fire-roasted diced tomatoes, drained
- ½ cup black beans, rinsed and drained
- ½ cup corn kernels
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet Rocking R Taco Seasoning
- salt and pepper to taste
- 1 tbsp olive oil
- ½ cup salsa (for topping)
- Fresh cilantro & sour cream (for garnish)
Instructions:
- Preheat oven to 375°F.
- Prepare the peppers: Slice the tops off the bell peppers and remove seeds. Lightly brush with olive oil and place in a baking dish.
- Cook the beef: In a skillet over medium heat, sauté onion and garlic until soft. Add ground beef, taco seasoning, salt, and black pepper. Cook until browned.
- Mix the filling: Stir in fire-roasted tomatoes, black beans, corn, and cooked rice. Remove from heat and mix in cheddar cheese.
- Stuff the peppers: Spoon the beef mixture into each pepper, packing it gently. Top with salsa and extra cheese.
- Bake for 25–30 minutes, until the peppers are tender and the cheese is bubbly.
- Garnish & serve: Sprinkle with fresh cilantro and a dollop of sour cream.
Serving Ideas: Pair with tortilla chips, guacamole, or a simple side salad for a complete meal!
Ranchy Tip: Want extra heat? Add diced jalapeños to the beef mixture for a spicy kick!
