Summer Ground Beef Guide- Meatball Subs

ROCKING R MEATBALLS
INGREDIENTS
2 LB GROUND BEEF
1 ½ CUP BREAD CRUMBS
½ CUP MILK
2 EGGS
½ CUP PARMESAN CHEESE, GRATED
2 TBS FRESH BASIL, CHOPPED
2 TBS FRESH PARSLEY, CHOPPED
2 TSP FRESH OREGANO, CHOPPED
3 CLOVES GARLIC, MINCED
KOSHER SALT AND GROUND PEPPER
2 TBS OLIVE OIL
MARINARA SAUCE
- In a small bowl combine bread crumbs and milk. Let stand for 10 min.
- In a large bowl, combine beef, eggs, cheese, basil, parsley, oregano, garlic, 1 tsp salt, ½ tsp pepper. Add the bread crumb mixture and mix all ingredients thoroughly. Roll into balls and place on baking sheet.
- Place a large frying pan over Med High heat, and warm oil. Working in batches, brown meatballs on all sides, about 6 min per batch. Transfer to plate
- Add meatballs to marinara sauce and cook for 30 min, covered. Serve with pasta.
