Rocking R Beef Chili
A family favorite for any fall or winter night. This delicious Chili recipe features our Rocking R Chili Spice Mix. Add some fresh veggies, Rocking R Ground Beef, and beans, and serve with a side of warm cornbread. Let the flavors meld all day, so when you come in that evening dinner is ready!
Serves: 8 people
Ingredients:
1 LB Sausage
1 Onion, Diced
1 Yellow/Red Bell Pepper
3 Cloves Garlic, Minced
1-2 TBS Red Chile Powder
2 TSP Salt
1 1/2 TSP Cayenne Pepper
1 1/2 TSP Cumin
1 TSP Pepper
1/8 TSP Corriander
1/8 TSP Cinnamon
2 Bay Leaves
1 Can (28 oz.) Diced Tomatoes
1 (12 oz.) Beer (if desired)
4 Cups Beef Stock
2 Cans Each, Black, Kidney, Pinto, and Navy beans (Drained and Rinsed)
Instructions:
- In a large Dutch Oven over Medium Heat brown Ground Beef, Sausage, Onion, and Bell Pepper. Once browned, add Garlic till fragrant.
- (*OPTION: Add cooked beef mixture to crock pot to simmer all day)
- ADD Chile powder, salt, cumin, black pepper, cayenne pepper, coriander, and cinnamon. Mix into Meat and Veggie Mixture. Add Bay Leaves.
- Mix in Stock, Tomatoes, and Beer. Stir Well.
- Next, add in the beans.
- Let Simmer for At least an Hour or up to all Day on Low!
- Top With Cheese, Green Onions, Tortilla Chips, Avocado, and Sour Cream
Options:
- Perfect to make in a Crock Pot or Instant Pot, Simmer All Day on Low!
- I Change Up the Meat all the Time!
- Options include: Shredded Beef, Elk, Antelope, Duck, Deer, Caribou
- For the Duck: Simmer in Red Wine With Onion and Garlic , add a dash of Balsamic vinegar and Worcestershire sauce. Season with garlic powder, onion Powder, and salt. Braise for 2-3 hours, then shred and add to chili.
