Pumpkin Pasta with Beef Italian Sausage

An absolute favorite in our family!  Creamy pumpkin pasta, with warm spices and a hearty sausage to bring all the flavors together.  

Ingredients:

1 lb penne, cooked to al dente
1 lb Rocking R Italian sausage
2 cloves garlic, minced
1 medium onion, finely chopped
1 bay leaf, fresh or dried
1 tsp thyme
1 cup dry white wine
1 cup chicken stock
1 cup pureed pumpkin
1/2 cup heavy cream
1/8 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
salt and black pepper to taste
Directions:
  1. Heat a large nonstick skillet over medium high heat. Add onion and sausage, and cook till browned. Transfer sausage to bowl. 
  2. Add olive oil, garlic, bay leaf, and thyme to the pan. Cook until fragrant.  Add wine and reduce by half.  Add stock, pumpkin, cinnamon, and nutmeg, and stir to combine.  Sauce will come to a bubble and stir in cream.  Reduce heat and add sausage.  Season with salt and pepper, to taste. Simmer for a few minutes, sauce will thicken.
  3. Combine cooked pasta and sauce in a large pan, heat till combined and warm.
  4. Top with parmesan cheese, and serve with a loaf of French bread.  

We love to Change up our protein options and top with sliced steak, ground beef, even sweet Italian sausage or bacon!
