Prime Rib

Every Christmas our family looks forward to a beautiful Rocking R Prime Rib roast.  Perfectly seasoned, juicy, pink, and a little kick of creamy horseradish.  It doesn't get much better, but most of all it's a time to sit and enjoy each other, no phones, just conversation and time together. 

We like to use our Traeger Wood Pellet Grill to smoke our Prime Rib.  This recipe can also be done in the oven.  The key, is using a meat thermometer to get the correct internal temperature.

 

Ingredients:

Prime Rib Roast

Season with a Rib roast rub or a combo of: kosher salt, pepper, garlic powder, onion powder, rosemary, and thyme. 

Minced garlic

Horseradish Cream (mix together and refrigerate until ready to serve):

1 1/2 cups Sour Cream

1/2 cup Horseradish

1 Tbs Dijon mustard

1 Tsp Worcestershire Sauce

Salt and Pepper

 

Directions:

1) Season the Prime Rib liberally with all dry seasonings using hands to pat onto all sides.  

2) Place Prime Rib on a Roasting pan with rack and allow to come to room temperature.

3) Traeger grill:  Set Grill Temperature to 450 degrees.  When ready put probe in roast, and cook for 30 minutes.  

4) Then reduce temperature to 300 degrees.  Cook until internal temperature on probe reads 130 degrees for medium rare.

5) Allow to rest for 15 minutes.  Then transfer meat to cutting board and carve.

6) Serve with Horseradish cream.  Enjoy!
