Grilled Steak Salad

Spoil mom with the BEST Mother's Day!  This meal is perfect for an outdoor adventure.  Take her to do her favorite activity or to her favorite spot.  Bring a little grill to cook up the steak.  All the other ingredients can be pre packed and sliced.  You'll be ready to go and she'll love the time with her family! Enjoy!

CHIMICHURRI STEAK MARINADE

INGREDIENTS:

STEAK (Any good slicing Steak: Flank, Skirt, NY strip, Flatiron, Bavette)

1 SHALLOT FINELY CHOPPED

1 JALAPENO FINELY CHOPPED

4 GARLIC CLOVES CHOPPED

1/2 CUP RED WINE VINEGAR

3/4 CUP OLIVE OIL

1/2 CUP CILANTRO CHOPPED

1 TSP KOSHER SALT

1/4 CUP PARSLEY CHOPPED

2 TBSP OREGANO

  • Whisk together all ingredients for a chunkier sauce or place in food processor and do a quick blend for thinner.
  • Seperate out 1/2 cup of marinade to top steak after cooking.
  • Place rest of marinade and steak in a ziplock bag and marinate overnight.
  • Heat grill to medium high.  
  • Place steak on grill.  Grill for 3-5 minutes per side.
  • Let rest, slice against the grain, and top with chimichurri sauce.
  • Top on a salad of Romaine Lettuce, baby tomatoes, shredded carrots, avocado, bell peppers, cucumbers, nuts, goat cheese, fried onions, and more!
